<p>Da jeg forlod den store bagedyst sidst i maj 2019 efter 5. program var jeg naturligvis ærgerlig over ikke at skulle bage sammen med mine nye bagevenner. Jeg var nået længere end jeg havde håbet og troet på.  Min erfaring gennem livet har dog lært mig, at der ikke er noget, der er så skidt, at det ikke er godt for noget. Og mit exit var også godt for noget. Min søn og svigerdatter skulle giftes pinselørdag, 14 dage efter mit exit, og jeg havde lovet, at jeg nok skulle lave bryllupskager. Derfor kunne jeg udfylde det tomrum, jeg følte efter bagedysten, med bryllupskagebagning sammen med min søn og svigerdatter.</p>

<p>Min svigerdatter havde ønsket et kagebord som dessert til ca. 100 gæster, med 2 slags bryllupskager, Sarah Bernard kager og macarons. Derudover var der et stort fad med forskellige friske bær. Bryllupskagerne bestod af  kage med chokolade/passionsfrugt og kage med hindbær/citron. 2 varianter, man ikke kan gå fejl af.  Vi lavede 4 kager af hver. Vi lavede dem over 1 uge før brylluppet. Det eneste der skulle gøres, var at tø kagerne op i køleskabet dagen før brylluppet og pynte dem inden serveringen.</p>

<p>Du kan finde opskrifterne på 6 kager &#8211; 3 af hver variant, der passer til ca. 60 personer. Man kan selvfølgelig bruge bundene og mousserne på kryds og tværs, og reducere opskriften, hvis man ikke har brug for 6 kager. Det er helt op til dig. Rør mandlerne godt rundt i karamellen.<br />
Hæld de karamelliserede  mandler ud på et stykke bagepapir drysset med flormelis og vaniljesukker.  Køl helt ned.<br />
Hak den afkølede masse i en foodprocessor.<br />
Fløden varmes op til lige under kogepunktet og hældes over chokoladen. Rør i midten med en silikone dejskraber indtil ganachen er blank og ensartet.<br />
Bland de hakkede karamelliserede mandler med ganachen.<br />
Den er nu klar til at fordele på vaniljebundene.</p>

Rør stille og roligt i massen indtil sukkeret er smeltet. Det sker ved ca. 60-65 grader.<br />
Sæt røreskålen i køkkenmaskinen, og pisk ved medium til høj hastighed indtil marengsen er kølet ned til stuetemperatur.<br />
Smør og flormelis piskes sammen så det er en ensartet masse.<br />
Fortsæt med at piske marengsen ved lav til medium hastighed mens du tilsætter smørblandingen lidt ad gangen indtil alt smør og marengs er en ensartet masse. Hvis massen skiller lidt fortsætter du med at piske ved medium hastighed, til massen samler sig. Hvis massen ser lidt flydende ud, sætter du røreskålen i køleskabet i 5-10 minutter og pisker igen. Den skal nok samle sig igen.<br />
Smørcremen er nu klar til brug</p>

Hak chokoladen og hæld den i en skål. Hæld derefter den varme sirup i en tynd stråle ned i chokoladen mens du pisker med en håndpisker. Når alt sirup er tilsat og chokoladen absorberet det, er den krystalliserede chokolade færdig.</p>

Gentag opsmøringen  som under første opsmøring, men denne gang skal smørcremen smøres ud i ca. ½ til 1 cm tykkelse. Vær omhyggelig med evt. huller i smørcremen og kanterne i toppen og bunden. Når du er tilfreds, stilles kagerne på køl/frost i ca. 30 minutter. Dæk kagerne med husholdningsfilm (spar ikke på det) Frys kagerne ned. Mine kager blev lavet over 1 uge før brylluppet og var godt filmet.<br />
De blev taget ud af fryseren dagen før, og sat ind i køleskabet – tag husholdningsfilmen af, inden de sættes i køleskabet, så du ikke risikere at smørcremen trækkes af.<br />
Det var heldigvis ikke nødvendigt at give kagerne et ekstra lag smørcreme, eller lappe på det inden serveringen</p>

Imens varmes vand og sukker i en gryde til der fremstår en gylden (ikke brændt) karamel<br />
Rør mandlerne godt rundt i karamellen.<br />
Hæld de karamelliserede  mandler ud på et stykke bagepapir drysset med flormelis og vaniljesukker.  Køl helt ned.<br />
Hak den afkølede masse i en foodprocessor.<br />
Fløden varmes op til lige under kogepunktet og hældes over chokoladen. Rør i midten med en silikone dejskraber indtil ganachen er blank og ensartet.<br />
Bland de hakkede karamelliserede mandler med ganachen.<br />
Den er nu klar til at fordele på vaniljebundene.</p>

Rør stille og roligt i massen indtil sukkeret er smeltet. Det sker ved ca. 60-65 grader.<br />
Sæt røreskålen i køkkenmaskinen, og pisk ved medium til høj hastighed indtil marengsen er kølet ned til stuetemperatur.<br />
Smør og flormelis piskes sammen så det er en ensartet masse.<br />
Fortsæt med at piske marengsen ved lav til medium hastighed mens du tilsætter smørblandingen lidt ad gangen indtil alt smør og marengs er en ensartet masse. Hvis massen skiller lidt fortsætter du med at piske ved medium hastighed, til massen samler sig. Hvis massen ser lidt flydende ud, sætter du røreskålen i køleskabet i 5-10 minutter og pisker igen. Den skal nok samle sig igen.<br />
Smørcremen er nu klar til brug</p>

Brug termometer. Det tager noget tid, men forlad ikke gryden.<br />
Hak chokoladen og hæld den i en skål. Hæld derefter den varme sirup i en tynd stråle ned i chokoladen mens du pisker med en håndpisker. Når alt sirup er tilsat og chokoladen absorberet det, er den krystalliserede chokolade færdig.</p>

Gentag opsmøringen  som under første opsmøring, men denne gang skal smørcremen smøres ud i ca. ½ til 1 cm tykkelse. Vær omhyggelig med evt. huller i smørcremen og kanterne i toppen og bunden. Når du er tilfreds, stilles kagerne på køl/frost i ca. 30 minutter. Dæk kagerne med husholdningsfilm (spar ikke på det) Frys kagerne ned. Mine kager blev lavet over 1 uge før brylluppet og var godt filmet.<br />
De blev taget ud af fryseren dagen før, og sat ind i køleskabet – tag husholdningsfilmen af, inden de sættes i køleskabet, så du ikke risikere at smørcremen trækkes af.<br />
Det var heldigvis ikke nødvendigt at give kagerne et ekstra lag smørcreme, eller lappe på det inden serveringen</p>

<p>Denne kage er lavet i forbindelse med vores årlige familiefest. Da vi var 17 deltagere, skulle det være en høj kage med mange lag, så alle kunne få et stykke &#8211; et højt og smalt stykke. Derfor lavede jeg 2 slags bunde, mandel- og chokoladebunde og 2 forskellige schweizisk marengssmørcreme &#8211; én med solbær og én med chokolade. Jeg ville afprøve en teknik med smørcreme i striber. </p>



<p>Man kan sagtens halvere opskriften, f.eks ved kun at bruge den ene type kagebunde, og kun lave én portion smørcreme. Man behøver heller ikke lave det stribede mønster på siden af kagen. Man kan nøjes med at smøre kagen op og pynte den med bær.</p>

Skrab røreskålen, og pisk lidt igen. Marengsen er nu blank og meget stiv. Tilsæt den bløde smør i små portioner mens der piskes på medium hastighed. Lad massen optage smøren inden den næste portion smør tilsættes. Fortsæt indtil alt smøren er tilsat og marengsen er silkeblød og lækker.<br />

<h2 class="wp-block-heading">Montering</h2>



<p>Når bundene er kølet af og smørcremene færdige,  placeres en chokoladebund nederst på et fad, eller kagepap &#8211; gerne på et drejeligt fad.  Smør med et tyndt lag solbærsylt og derefter solbær smørcreme. Læg en vaniljebund ovenpå og smør et lag chokoladesmørcreme på bunden. Fortsæt indtil alle bundene er brugt. Stil kagen på køl i ca. 1/2 time. </p>

<p>Smør derefter kagen op med et tyndt lag chokolade smørcreme så krummerne bliver forsejlet og kagen er glat og ensartet.</p>

<p>Sæt kagen på køl 15 min.</p>



<p>Smør kagen med et tykkere lag smørcreme på siden af kagen. Det skal være ca 1 cm tykt. Toppen smøres også med smørcreme så den er fin og glat. Nu skal der laves riller i smørcremen med denne kage spartel. Hold spartlen helt lige &#8211; både vandret og lodret. Sæt takkerne ind i smørcrenen og drej langsomt på drejefadet ca 5-10 cm og tør spartlet af. Sæt spartlen ind i slutningen af rillerne og drej igen &#8211; tør spartlen af igen. Fortsæt indtil hele kagens kant har vandrette riller.</p>

<p>Skrab nu forsigtigt med en glat/lige kagespartel mens kagen drejes på drejeskiven lidt ad gangen tør spartlen af flere gange. Skrab indtil kagens sider har ensartede striber.</p>



<p>Pynt toppen af kagen med bær og resterne af smørcreme med forskellige tyller efter ønske.</p>

<p>Min søn er en madnørd. Ved besøget i dag skulle vi naturligvis lave hjemmelavede ravioli med butternutsquash med parmesan. Efter et par forsøg med tykkelse af pastaen, og foldning lykkedes det til sidst at lave nogle rigtig flotte <a href="https://bulowskokken.dk/">ravioli</a>.</p>
