<p>Brug en køkkenmaskine eller ælt dejen med håndkraft<br />
Opløs gæren i den lune mælk og tilsæt sukker og æg. Tilsæt melet (hold lidt tilbage). Tilsæt salt og blødt smør, lidt ad gangen.<br />
Dejen skal være hel glat og elastisk.<br />
Lad dejen hæve i 20 min under husholdningsfilm og et viskestykke.<br />
Tag derefter dejen ud på lidt mel på køkkenbordet, og form en stor bolle. Sæt den i en bagering eller en springform på 20 cm.<br />
Tryk bollen lidt flad og lad dejen hæve under et viskestykke i 30 min.<br />
Pensl med den anden halvdel æg med lidt mælk i.<br />
Bag bollen i almindelig ovn &#8211; over/undervarme ved 220 grader i ca. 15-20 min. Den den er let gylden.<br />
Lad bollen køle helt af.<br />

<p>Læg husblasen i blød i koldt vand i ca. 10 min.<br />
Hæld godt halvdelen af olien fra tunen, og mos tunen godt med en gaffel sammen med revet løg, mayonaise, cremefraiche, dild.<br />
Klem vandet fra husblassen og smelt det i microovn i ca. 10-15 sekunder (hold øje) eller i en gryde ved meget svag varme.<br />
Når husblassen er flydende blandes der citronsaft i den, for at køle den ned. Bland husblas/citronsaft-blandingen i tunmassen. Smag til med salt og peber.</p>

<p>Brug springformen med kageplast til at bygge &#8216;kagen&#8217; op.<br />
Skær Bollen i 3 ca. lige tykke bunde. Bunden af bollen skal bruges som top med bunden op (for at få en pæn lige/plan top på kagen. Toppen af bollen skal bruges i midten. Skær evt. lidt at den buede top af.<br />
Læg den midterste bund i bunden. Smør den med et par spiseskefulde tyttebærmarmelade. Fyld halvdelen af tunmoussen ovenpå.  Læg &#8216;top-bunden&#8217; omvendt på tunmoussen og smør et par spiseskefulde tyttebærmarmelade på bunden. Fyld tunmousse oven op. Læg til sidst den pæne lige bund øverst. Dæk kagen med husholdningsfil, og sæt den på køl minimum 2-3 timer &#8211; Gerne til næste dag.</p>

<p>Rør peberrodssalat med et par spiseskefulde tyttebærmarmelade. Pisk fløden til let skum og vend det ned i peberrodscremen<br />

<p>Tag kagen ud af køleskabet og sæt den på et fad, eller en roterende kageplade (hvis du har det)<br />
Smør kagen op med et lage peberrodscreme &#8211; både på siden og toppen &#8211; med en spartel.<br />
Resten af cremen fyldes i en sprøjtepose med en tyl (stjerne eller rund) og pynt kagen på toppen med små dutter.<br />
Skær den økonogiske citron i skiver og kvarte og sæt dem i dutterne. Sæt en reje og lidt dild eller karse sammen med rejen og citronen.<br />
Pynt siden med dild, persille eller ærteskud, som du har lyst til.</p>

<p>Pres appelsiner og citron. Mål væsken af så det passer med sukkeret. Lige meget af hver. Skrab skindet af ingefær og skær den i stave. Kom hele baduljen i en gryde og kog ved middelvarme i cirka 20 minutter uden låg.<br />
Tjek tykkelsen af siruppen ved at hælde nogle dråber på en kold tallerken. Vær opmærksom på at siruppen bliver tykkere, når den bliver helt kold. Kog lidt længere, hvis du vil have den mere tyktflydende. Lad det stå ca 15 minutter og køle. Så undgår du at dine flasker sprænger, når du hælder den varme sirup på flasker. Skum eventuelt siruppen inden du sigter og hælder den på skoldede flasker eller glas.<br />
Der bliver ca. 2,5 dl af denne portion.</p>

<p>Pisk æggeblommer lyse og luftige med flormelis, revet citronskal. Smag til med lakridspulver. Pisk fløden til medium flødeskum. Vend æggesnapsen og piskefløden. Hæld massen i en fryseegnet beholder og sæt den i fryseren. Rør hver halve time. Når isen begynder at fryse til softice fordeles isen i låget til patentglassene. Glat overfladen og læg husholdningsfilm hen over. Sæt dem i fryseren til du skal servere desserten. (Gerne dagen før)<br />

<p>Hæld stikkelsbærrene i en gryde med syltesukker ved lav varme. Lad sukkeret smelte helt langsomt i 30-60 min., alt efter om du bruger frosne eller friske bær. Når bærrene er møre men stadig hele køles bærrene ned. Stil dem i køleskabet indtil du skal servere desserten. </p>

<p>Æg, flormelis og majsstivelse piskes godt sammen i en skål.  Saften og skallen af citronerne varmes langsomt op i en gryde. Lige inden kogepunktet hældes citronsaften over æggesnapsen under kraftig piskning. Hæld massen tilbage i gryden og pisk til cremen tykner. Må ikke koge. Køl cremen helt ned. Pisk fløden til medium skum. Vend fløden i den helt kolde creme. Hæld citroncremen i en lille engangs sprøjtepose, og stil den i køleskabet indtil desserten skal serveres. </p>

<p>Bland vand og sukker i en gryde. Kog til temperaturen rammer 135 grader. Imens du venter, hakker du chokoladen og hælder den i en skål.  Når sukkerlagen rammer 135 gr. hældes lagen over chokoladen, mens der piskes i chokoladen med en håndmixer. Stop når chokoladen er som groft sand. Køl chokoladen af på en stykke bagepapir. Opbevar chokoladen i en lufttæt beholder i stuetemperatur til desserten skal pyntes.</p>

<p>Smelt sukkeret ved medium varme i en gryde. Når massen er gylden hældes den ud på bagepapir og drysses med lakridsknas (kan undlades)<br />
Når karamellen er helt kold og stiv brækkes den i mindre stykker og opbeholdes ved stuetemperatur til desserten skal pyntes.</p>

<p>Pisk æggehviderne stive mens sukkeret piskes i lidt ad gangen. Når marengsen er helt stiv og blank vendes det sigtede flormelis forsigtigt i af 2 omgange. Kom marengsen i en sprøjtepose med lille tyl (stjerne eller rund tyl)<br />
Sprøjt små marengs ud på pagepapir og bag dem ved 110 grader varmluft i 20-30 minutter. Når de ikke hænger i bagepapiret er de færdige.  Køl helt af. Der vil være flere marengs end der skal bruges til desserten. Opbevar dem i en lufttæt beholder i stuetemperatur. Jeg brugte kun de helt små hvide marengs.<br />
Man kan også brække større marengs, men det ser bare pænere ud med små, bitte marengs på 1-2 cm</p>

<p>I bunden af 6 patentglas fordeles de marinerede stikkelsbær. Klip et hul på ca. 0,5-1 cm hul i posen med citroncreme. Sprøjt små portioner citroncreme ned i stikkelsbærrene. Drys karamelliseret chokolade hist og pist. Pynt med karamel, marengs og citronmelisse.<br />
Tag lågene med lakridsisen op af fryseren. Monter stålringen på låget og sæt dem fast på glasset. Gummipakningen skal ikke bruges. Luk låget ned over glasset og spænd låget fast. Servér.</p>

<p>Sæt husblas i blød i koldt vand. Varm fløden op sammen med citronskallen til næsten kogepunktet. Smelt chokoladen kort i mikroovn eller over vandbad. Chokoladen behøver ikke være helt smeltet. Opløs lakridspulveret i fløden. Hæld fløden over chokoladen. Lad det stå ca. 1 min. Rør med en dejskraber til massen er ensartet. Hvis lakridspulveret ikke opløses helt, kan du stavblende massen til det er opløst. Vrid husblassen og smelt den i den lune chokolademasse. Ganachen dækkes til med husholdningsfilm (helt ned på overfladen) og sættes i køleskab til den er helt gennemkold. Det kan være en fordel at lave den dagen før, da det tager flere timer at køle den ned. </p>

<p>For en springform 23 cm med bagepapir i bunden. Sæt ovnen på 175 grader varmluft.<br />
Smelt smøret i en lille gryde. Tilsæt chokoladen og rør indtil massen er ensartet. Pisk æg, sukker og vanilje luftigt i 3-5 minutter. Vend den let afkølede chokolade- og æggemassen godt sammen. Vend mel og hakket chokolade i dejen.<br />
Hæld dejen i formen og bag den i ovnen i 13-15 minutter til den er gylden.  Den skal ikke være helt bagt men heller ikke flydende. Lidt fast i kanten og skal give efter for et let tryk med en finger. Lad bunden køle helt af inden den tages ud af formen.</p>

<p>Tænd ovnen på 180 grader varmluft<br />
Læg bagepapir i bunden af springformen.<br />
Pisk æggehviderne stive, tilsæt sukker undervejs. Pisk æggeblommer og sukker til en luftig æggesnaps. Bland bagepulver i melet og vend forsigtigt mel, mandler og æggehvider i æggemassen. Hæld dejen i formen og bag den i 18 &#8211; 20 min til den er gylden og gennembagt ( tjek med en kødnål) Lad bunden køle af i formen. Når den er næsten kølet helt af, løsner du den fra formen og lader den stå på hovedet på et gitter indtil kagen skal samles.<br />

<p>Læg husblas i blød i koldt vand. Kog solbær, citronsaft og sukker i ca. 5-10 minutter. Stavblend grøden og sigt kernerne fra. Lad grøden køle mens fløden piskes til en let skum. Smelt husblassen i den lune grød. Køl grøden med med yoghurten 1 skefuld ad gangen og rør godt. Fold piskefløden i grøden ad 3 gange gange.</p>

<p>Læg blondiebunden i en kagering med plastfolie. Pisk hurtigt lakridsganachen til en luftig creme. Pas på ikke at overpiske. Fordel cremen på blondien. Læg den øverste mandelbund ovenpå. Fordel solbærmoussen på bunden, og læg den nederste mandel bund ovenpå med den glatte bund opad, så toppen er plan. Stil kagen på køl ca. 1 time.</p>

<p>Æggehvider og sukker røres sammen i en skål over vandbad. Rør indtil sukkeret er opløst (ca. 60 gr.) Jeg bruger skålen fra køkkenmaskinen. Pisk marengsen på køkkenmaskinen indtil den er kølet helt ned. Det kan tage 10 minutter. Skrab røreskålen, og pisk lidt igen. Marengsen er nu blank og meget stiv. Tilsæt den bløde smør i små portioner mens der piskes på medium hastighed. Lad massen optage smøren inden den næste portion smør tilsættes. Fortsæt indtil alt smøren er tilsat og marengsen er silkeblød og lækker. Tilsæt vaniljepasta</p>

<p>Stil den kolde kage på et drejebræt. Smør den bløde smørcreme op på kagen. Start på toppen med en paletkniv. Fortsæt på siderne. Pas på ikke at få krummer fra kagen i smørcremen. Brug en lige plastikspartel til at gøre siden helt  glat og lodret skrab toppen med paletkniven fra siden og ind mod midten, så kagen bliver skarp.<br />
Stil kagen på køl i 1/2 &#8211; 1 time. Tjek om der er huller i smørcremen og korrigér med resten af smørcremen.<br />

<p>Riv marcipanen og pisk den sammen med sukker og blødt smør. Tilsæt æggene én af gangen. Vend mel og de hakkede pistacienødder i marcipanmassen til en der fremstår en ensartet masse. Hæld dejen i en rund form 18 cm i diameter.  Bages ved 190 grader varmluft i 15-20 minutter. Bunden skal give lidt efter ved tryk. Tjek også med en kødnål. Køl bunden af. Hvis bunden buler lidt op skal du skære toppen forsigtigt af med en brødkniv. Sæt bunden på et fad med en kagering rundt om, foret med kageplast.</p>

<p>Kog en dåse -uden at åbne den &#8211; i en gryde med vand i ca. 3-4 timer. Køl af og vej halvdelen fra. Tilsæt salt og rør godt rundt. Smag til.<br />
Man kan også købe kondenseret mælk, der er kogt, hvis det skal være nemt og hurtigt. Fordel karamellen på bunden og sæt kagen i køleskab i min. En halv time</p>

<p>Skær abrikoserne i tern og put dem i en gryde med sukker, citronskal og saft og varm dem forsigtigt op. Lad sukkeret smelte langsomt og kog det hele i ca. 5-10 minutter. Stavblend mosen og lad den koge lidt mere, indtil væsken er reduceret, og mosen minder om marmelade. Del mosen i to portioner på 1/4 ca. 135 g,  der skal bruges direkte på bunden og 3/4, der skal bruges i moussen.<br />
Obs- Hvis du vil gøre det ekstra lækkert og aromatisk, kan du knække 2-3 stene forsigtigt og tage kernene ud. Pille hinden af og hakke kernen, der ligner en blød mandel, fint. De er meget bitre, så brug ikke alle kernerne. Kog det med.</p>

<p>Den lille portion skal bruges her. Sæt 1 blad husblas i blød i koldt vand i 10-15 minutter. Opløs husblassen i den varme mos. Når mosen er kølet ned til stuetemperatur fordeles den jævnt og forsigtigt på den kolde kage med saltkaramel og sættes i køleskabet igen i minimum 1/2 time.</p>

<p>Læg husblassen i blød i koldt vand i 10-15 minutter. Sigt mosen, så den er fri for skaller. Varm mosen lidt op og smelt husblassen i mosen. Pisk fløden let, rør godt i yoghurten og bland den i fløden. Vend lidt af flødeblandingen i mosen af gangen &#8211; gerne 3-4 gange.<br />
Hæld moussen over kagen og ryst forsigtigt kagen, så moussen får en glat overflade.<br />
Stil kagen på køl (eller frys) til moussen er fast.</p>

<p>Pynt kagen. Jeg satte et hvidt chokoladebånd om kagen, dryssede krystalliseret  chokolade på tværs af kagen, pyntede med små marengs, guldkugler og stedmoderblomster.<br />
Man kunne også sætte et marcipanbånd om.</p>

Der blev ca. 8 dl. af denne portion<br />
Opbevares i køleskab. Vend flasken inden brug, da den bundfælder lidt. </p>

<p>Skræl citronerne med en grøntsagsskræller og sørg for at det hvide under skrællen ikke kommer med.<br />
Blanchér citronskallerne i lidt vand i en gryde i 25 sekunder &#8211; hæld dem i en sigte og skyl dem i koldt vand. Gentag 7 gange.<br />
Hvis du har en Cooker går det hurtigere at få vandet op at koge </p>

<p>Pres citronerne. Mål hvor meget saften vejer og tilsæt dobbelt så meget sukker. Mine 4 citroner gav 160 gram saft, så jeg skulle bruge 320 gram sukker.<br />
Kog saft og sukker op til sukkeret er smeltet.<br />
Blend sukker/ citronlagen sammen med citronskallerne i 5-7 min. Køl lidt af.<br />
Hæld siruppen i en skoldet / ren flaske. Jeg brugte en plastikflaske med lille tud. Opbevar siruppen i køleskabet. Ryst flasken inden brug.<br />
Denne portion gav 400 ml.</p>

<p>Pisk det bløde smør med sukker og citronskal til en cremet masse. Pisk æggene sammen og pisk æggemassen i, lidt ad gangen. Pisk flødeosten i. Bland mel og bagepulver og vend skiftevis melblanding og citron/appelsin blandingen i æggemassen. Bag kagebunden i en springform 18 cm ved 170 grader varmluft i 20-25 minutter. Køl kagen af i formen, og stik eller skær en cirkel på 8 cm ud i midten af kagen, så den passer i formen. Lad udstikkeren sidde i hullet, og sæt kagen med springform i fryseren i min. 1-2 timer.<br />
 Hvis du ikke har en Intreccio- form kan du undlade at lave hullet, og støbe kage i en springform på 20 cm.</p>

<p>Læg husblassen i blød i koldt vand min. 10 minutter.<br />
Kog hindbærpureen op med sukker. Køl lidt ned, og smelt husblassen i den varme hindbærpuré. Køl ned til ca. 30-35 grader, og hæld hindbærgeléen over den frosne kagebund.<br />
Sæt kagen i fryseren til den er helt frossen (natten over)</p>

<p>Læg husblassen i blød i koldt vand min. 10 minutter.<br />
Kog 120 g piskefløde op sammen med revet citronskal. Lad fløden stå i 20 min. Si fløden (kassér citronskallen), tilsæt honningen og varm fløden op igen til honningen er opløst. Opløs husblassen i den varme fløde  og hæld den over den hvide finthakkede chokolade. (Hvis du har chokoladeknapper, behøver du ikke hakke dem)<br />
Blend med en stavblender til massen er blank og ensartet. Pisk fløden til en meget blød skum med vaniljen og   tilsæt den græske yoghurt. Bland fløden og yoghurten godt.<br />
Bland lidt af flødeblandingen ned i chokoladeblandingen lidt ad gangen, indtil de 2 masser har næsten samme temperatur. Fold masserne sammen og hæld yoghurtmoussen i formen. Jeg holdt en smule tilbage (ca. 1 dl).  </p>

<p>Sæt formen med moussen i fryseren i ca. 15 min. Hold øje med at den ikke bliver for stiv. Den må ikke sætte sig helt, for du skal nu støbe kagebund med hindbærgelé ned i moussen.  Hvis du gør det for tidligt synker kagebunden for langt ned i formen.<br />
Tag bunden ud af formen og vend bunden med hindbærgeléen nedad &#8211; ned i moussen. Tryk let for at sikre at bunden ligger vandret, og moussen lægger sig om bunden. Du kan du evt. fylde op med resten af moussen.<br />
Stil kagen i fryseren til næste dag, eller til den er fuldstændig frossen</p>

Frys kagen ned med hindbærgeléen. Sæt en lidt større springform udenom kagen, og hæld moussen over til den dækker hele kagen. Sæt på frys min 4 timer og løsn kagen fra form og plast. Pynt som du har lyst til.</p>

<p>Rør æg, sukker og vanilje sammen til en luftig æggesnaps. Imens smeltes smør ved svag varme. Smelt chokoladen i det lune smør. Rør godt til det er stuetemperatur, tilsæt mælken. Chokoladesmøren hældes i æggesnapsen. Bland mel, bagepulver, kanel og salt sammen, og rør det hurtigt i æggeblandingen.<br />
Fordel dejen i 12 store muffinforme. Bag muffins ved 180 grader varmluft i 15-18 minutter</p>

<p>Kog en uåbnet dåse kondenseret mælk i simrende vand i ca. 3 timer.<br />
Lad dåsen køle af inden du åbner den. Tilsæt salt.</p>
<p>Endnu lettere er det, hvis du kan finde kondenseret mælk, der allerede er kogt.<br />
Man kan også lave det selv af smeltet sukker kogt med fløde og salt</p>

<div class="cooked-single-direction cooked-heading">Schweizisk marengs butter creme (SMBC) med chokolade og karamel</div>

<p>Bland æggehvider og sukker i en skål over vandbad. Rør ofte. Når sukkeret  er opløst (ca. 60-65 grader) røres/piskes æggehviderne på køkkenmaskinen, indtil massen er kold (stuetemperatur). Tilsæt det bløde smør lidt ad gangen, indtil alt smørren er optaget af marengsen.<br />
Smelt chokoladen i microovn &#8211; 30 sekunder &#8211; rør godt rundt. 10 sekunder &#8211; rør godt rundt. Fortsæt med 5-10 sekunder indtil chokoladen er smeltet. Tilsæt en god skefuld saltkaramel og bland  chokolade/karamelblandingen med smørcremen med. Pisk cremen godt igennem indtil den er blank og cremet.</p>

<p>Når kagerne er afkølede laver du et lille hul midt i kagen &#8211; f.eks. med en   æblekerneudstikker. Sprøjt lidt saltkaramel i hullet.<br />
Hæld smørcremen i en sprøjtepose med en fin tyl. Jeg brugte en Wilton 1M- stjernetyl. Sprøjt en fin rose eller noget andet fint på kagerne, og pynt dem, som du har lyst til</p>

<p>Opløs gæren med lidt af vandet i en stor dejskål. Tilsæt halvdelen af melet og rør med en ske eller en grydeske. Til salt og resten af melet. Du har nu en  klistret dej, der ligner havregrød. Hvis dejen er meget flydende tilsætter du lidt mere mel. Dæk dejen til og lad den hæve i ca. 8 timer eller natten over på køkkenbordet.  Hvis du har en stor Tupperware dejskål er den perfekt. </p>

<p>Drys mel i et tyndt lag ud på køkkenbordet.<br />
Hæld dejen ud på køkkenbordet (dejen er hævet, luftig og ret flydende). Tag to dejskrabere (hårdt plastic eller metal) og fold dejen ind over fra to sider med dejskraberne. Brug ikke hænderne. Forestil dig, at dejen nu er i 3 lag. Vend dejen en kvart omgang og fold igen på samme måde. Lav foldningen en sidste gang. Dejen er nu elastisk med glat overflade. Læg dejen på et flad fad. Drys lidt mel over og læg husholdningsfilm over. Lad dejen hæve ved stuetemperatur i 1-2 timer.</p>

<p>Stil din gryde, eller stegeso med låg i ovnen og tænd ovnen 250 grader.<br />
Lad gryden stå minimum 30 minutter i ovnen så den er helt gennem varm.<br />
Tag gryden ud og hæld dejen i uden at brænde fingrene. Læg låget på og sæt gryden i ovnen. Bag i 30 minutter. Tag låget af, sæt varmen ned på 230 grader og fortsæt bagningen i 10-15 minutter<br />
Lad brødet køle af på en bagerist.</p>
